Sudha Aunty’s Fried Potatoes

Simple accompaniment for Curd Rice or Rice and Sambar (South India Lentil Soup). The taste is savoury with a strong hint of roasted cumin. Salt and Cumin give a nice grainy texture to the potatoes.

Ingredients:

Potatoes 3 cut in small pieces

Salt

Cumin Powder 1 Teaspoon

Vegetable Oil – 1/2 Teaspoon

Steps:

  • Cut the potatoes and clean in water. Pat dry it well. Sprinkle salt and and put the dish in an angle so that the water accumulates on the side. Drain the water. Pat dry the potatoes again.
  • In a flat pan put the oil on medium heat. Once hot add the potatoes and sprinkle a little salt and mix and spread out evenly.
  • After 2 minutes mix and spread out evenly again. Close the lid.
  • After 2 min mix again and spread out evenly and close the lid.
  • Reduce the flame to low and add the Cumin powder and mix and spread out evenly and cook in open. Saute for 5 minutes to change the sides a few time only.
  • Once the potatoes are browned and cooked. They are ready to serve.

Tips:

  • I add a pinch of Cumin Powder before closing the gas.
