While I like to experiment, this preparation went from being a disaster to a master piece. I cannot recreate it as I did not write down what I did or quantity of the ingredients but I remember the general process. Worth trying it again.
Initial plan was to saute pork belly cubes and asparagus like a stir fry. So I put oil, fried onions, added green chillies, curry leaves, spices, pork and later chopped asparagus. Soon I realized the pork was not cooking and the everything else had and it looked like a disaster anyway. So I was thinking how to salvage it. Out came the pressure cooker and I added all that was in the pan and water and gave it a couple of whistles.
I then started the process of sauteing again. What happened now is the Pork was beautifully cooked but all the vegetables were pasty. The base spices and asparagus onion was like a well cooked mixture.
When my guests arrived and they tried it, their eyes opened up wide. It was indeed awesome and the asparagus mixture was so tasty that it amped up the whole dish.
I used spices such as chilli Powder, cumin, coriander, black pepper powder.
Made me feel you just can’t go wrong with pork belly. Never tried it again as I don’t recall the quantity, sequence but next time I try this and if it comes out as mouth watering as it was…will post the recipe.
