For a quick lunch on Sunday when we are really feeling lazy. Here is the 10 minute chowmein from the Indian street food in your kitchen. Keeping it short as this is a toss in dish according to us.
Use the vegetables you have – onions, capsicum, peppers, cabbage, carrots, beans, book choy, choy som. Any combination, but just cut the vegetables in one size. Small, long strips, at ana angle etc. Bok Choy and Choy Som can be kept whole.
Add Mushroom or small Shrimp as variations.
Steps:
- Put water to boil and a pan on medium flame adding a tablespoon of oil.
- Chop your vegetables as available and a clove of garlic.
- Add all vegetables to the pan and add some salt and black pepper.
- Add a pack of noodles in the boiling water.
- Saute the vegetables.
- Once the noodles is almost cooked, strain and run under cold water in a strainer.
- Add the noodles to the vegetables and mix. Add a little dark soy and 1/2 a teaspoon of vinegar.
- Check and adjust for salt and mix.

I do this in 10 minutes when in a rush.
I used sweet soy (Acin Kecap), Vinegar, and the following veggies – cabbage, carrots, capsicum, spring onions, onions and a clove of garlic.
Enjoy with a side of Indian Gobi or Paneer Manchurian.
