Mutton Yakhni Pulav

Mutton Yakhni Pulav is an all time favorite. Easy to make and less of fuss. I like this toss it all in recipe.

Cook the meat till tender along with whole spices (Back Pepper, Green Cardamom, Black Cardamom, Cinnamon, Cloves, Bay Leaf, Cumin, Coriander), whole onion, garlic cloves and ginger.

Strain and retain the water.

Fry onions, add powdered spices of choice and the soaked and strained rice and meat and saute for a bit. Add the stock and water and pressure cook or in a heavy bottom and lid dish. Till rice is done.

Special attention to salt and green chillies to get it to the right taste and hotness, else becomes bland.

Soak long grain rice for a good hour and strain before use.

Can tie the whole spices in muslin pouch or do as I did and separate the whole spices from meat by hand as I did.
