Breakfast today is the famous Rajasthani Poodi and Bihari Aloo Bhaji. Love eating this in train stations in Rajasthan and Bihar…accentuates the journey!
Here are some tips for the Rajasthani Poodi/Poories –
- For 20 Poories – 2 cups Wheat Flour + 1 cup Chickpea Flour + 1/4 cup Semolina. Do the math for 10.
- Basic mix – turmeric, chilli powder, roasted cumin powder, roasted coriander powder, dried fenugreek, cumin whole (or Shahi Cumin), Ajwain whole, salt to taste, oil. You can go with what you like, I keep changing based on my mood.
- Pour little water at a time, you want the mixture as dry as possible. Let it rest for a while wrapped in a cling wrap.
