Keeping it simple here and go with your gut as I did. Feel and taste your way through.
Chop quarter of an onion, 3 green chillies – deseeded and chopped, 1 garlic clove chopped, quarter carrot chopped, 1 zucchini in small quarter pieces, shrimp. Cayenne pepper, Italian seasoning, salt to taste, Farfalle pasta, pasta sauce (I used Four Cheese Rosa but it tastes awesome without a pasta sauce and even any cheese), red wine. Oh and Olive oil.
Heat olive oil, add the garlic, onions and chillies and saute for a few minutes. Add the carrot and zucchini and saute for a few minutes. Add the shrimp followed by cayenne pepper, italian seasoning and salt to taste. Saute for 4 to 5 minutes and adjust spices as needed.
Add Farfalle directly from the box and water covering a little higher than the level of the ingredients in the pan. Taste the liquid and adjust for salt as needed. Bring to boil, cover and cook, stirring occasionally for 14 to 16 minutes.
Reduce the flame, add red wine, pasta sauce as options for flavoring. Mix, taste and adjust as needed. Switch off the flame and leave covered for a few minutes.
Enjoy!
