Raw Banana Cutlets (Odia Kadali Bara)

My dad taught us how to make this and if I recall he learnt it from my grand mom. This has a nice tropical feel to it and is savory. This was a regular as we grew up and we still make it today.

Ingredients:

  • Raw Banana (medium size) 4
  • Vegetable Oil
  • Onions finely chopped 1 Tablespoon
  • Green Chili 1 finely chopped
  • Ginger 1/4 teaspoon finely chopped
  • Coriander Leaves 1 tablespoon finely chopped
  • Coconut 1/2 the quantity of Banana grated (2:1 ratio
  • Salt to taste
  • Roasted Gram Flour (Bhuna Besan) – 1 Teaspoon

Steps:

  • Boil the raw Banana till it is soft and let it cool removing from the water. Use a pressure cooker if available.
  • Roast the gram flour in a flat pan on very low heat till there is an aroma. We light roast it and don’t let it turn too brown.
  • Mash the Bananas and mix all the ingredients well.
  • Make small flat patties of the mix.
  • Heat vegetable oil in a flat pan and reduce to simmer. Put the shaped patties on the pan and let it cook till one side is golden brown and then flip to other side gently and cook till its golden brown.

Enjoy with slices of raw onion, ketchup or along with the main course.

Tips:

  • Use very little or no oil
  • Bake instead of frying
  • You need a hint of ingredients don’t end up putting too much of onions or ginger etc.
