Vegetable Kebab

Vegetable Kebab

A very simple and quick cutlet that tastes great and you can make it with several variations of spices, vegetables and textures. I love the way the peas peek out and I make sure I dont mash up the peas fully, but you can.

Ingredients:

  • Potatoes 2 boiled and mashed
  • Vegetable oil 1 Teaspoon
  • Green Peas frozen 1/2 cup
  • Carrot 4 Tablespoons grated
  • Beetroot 1 Tablespoon garated
  • Kebab Masala – 2 Teaspoons
  • Green chillies – 1 chopped fine
  • Bread crumbs 1 slice run in a mixie
  • Salt to taste

Steps:

  • Run frozen peas in cold water till they are soft, let strain and pat dry. Add to boiled and peeled potatoes along with the grated carrots and beet root
  • Add the green chillies, onion, Kebab Masala and salt to taste.
  • Mash it well.
  • Add bread crumbs and mash some more.
  • Give it a round flat shape or poi ted at one end and round on the other.
  • Shallow fry in a flat pan with less oil till each side is brown
  • Serve with Sauce or a mint chutney

Tips:

  • I use a Kebab masala I had picked up in Coorg – Madekari, India. Try using a Shaan Kebab masala. You can also use a mix of spices and garam masala at home.
  • Use very little oil or bake it.
  • Can dip in egg and roll over bread crumbs and then fry or bake.
