Okra Masala

Here is a simple recipe for Okra Masala with a slight twist from the regular home made okra fry.

Ingredients:

  • Okra 1 pound Pound cleaned and cut into 1 or 3/4 inch pieces. Can also keep whole and making slits through the length (if the Okra is not too long)
  • Onion 1/2 sliced
  • Potatoes 1 medium size cut in small cubes
  • Whole Cumin – 1 Tablespoon
  • Whole Coriander – 1 Tablespoon
  • Whole Dry Red Chilli – 2
  • Whole Fennel – 1 Tablespoon
  • Mustard Oil – 2 Tablespoons
  • Ginger Garlic Paste – 1 Tablespoon
  • Turmeric Powder – 1/2 Teaspoon
  • Chilli Powder (optional)
  • Lemon Juice – 1 Tablespoon
  • Salt to taste

Steps:

  • Dry roast the whole spices in a pan on medium flame till there is a good aroma of roasted spices. Let it cool and run in a processor to get a coarse mix.
  • In a bowl, add the coarse mix, 2 tablespoon mustard oil, lemon juice, ginger garlic paste, salt to taste, turmeric powder, chilli powder (optional) and mix well to get a coarse paste.
  • Mix this paste with the Okra.
  • In a pan on medium flame, heat oil and once hot, saute 1/4 teaspoon whole cumin, add onions and saute for a minute.
  • Add potatoes and a little salt and saute for 2 to 3 minutes
  • Add the Okra, sprinkle some water, adjust salt and saute till potatoes are done and the okra is cooked (keep covered and mix from time to time).
