Mom’s Cauliflower Roast

Here is an all time favorite in our family, my  Cauliflower Roast. Mom made it today and so did I though 7000 miles apart. Feels like we are together.

This is what I did…slightly different from my Mom’s.

  • Remove the leafy part of a whole cauliflower and cut the base short till just about the end.
  • Put the whole Cauliflower in water and add salt. Cook on medium high for a good 30 to 40 minutes. Use a fork to check if its soft. You don’t want it too soft.
  • Remove and drain excess water.
  • Brown the cauliflower well in oil and butter. Transfer to the center of your serving dish.
  • In the same oil fry onions, garlic, tomatoes add pepper, salt, thyme, cayenne pepper, cinnamon powder and clove powder or add whole. Can get creative and add Paneer Masala or any ready to use Indian spice like Sabzi Masala (I prefer to avoid it). I added a little hot water to get a little more gravy. Transfer to the serving dish around the cauliflower and some oil / gravy pour on top.
  • Bake potatoes and carrots mixed with herbs, salt and butter at 400 degrees F for 15 min.
  • Add around the cauliflower.
