Matar Nimona

Tried something different today and green!

Matar Nimona is a vegetarian dish from Uttar Pradesh, India and is very simple to make. Just wanted to try the different spice base than tomato based gravys that we are so used to in Indian cuisine.

Here are some quick steps –

  • Cut potatoes in cubes, clean, dry and fry till it is evenly red in mustard oil if possible else vegetable oil. Keep aside.
  • On the side make a rough paste of fresh green peas. I use frozen peas from the freezer, leaving it in water for a bit and then straining. No water to be added while making the rough paste.
  • Add the paste to the oil you fried potatoes in and saute till the mixture is dry. It will soak up the oil as well. You need to to keep stirring. Keep aside.
  • Make a paste of fresh coriander, green chillies, Garlic and Ginger with some water.
  • Add more oil to the Pan and once hot, add cumin seeds and in a bit some Asfoetida.
  • Add the Coriander paste and saute till it is dry and oil is oozing out. Add the Green Pea sauted paste now and mix well for a few minutes.
  • Add spices – Turmeric Powder, Chilly Powder, Coriander Powder, Garam Masala and salt and saute for 2 to 4 minutes on low flame.
  • Add hot water for the gravy and mix well and let it cook for a few minutes.
  • Add the fried potatoes and whole green peas. cover the lid and let it cook on medium flame while mixing from time to time. Taste for salt and add as needed.
  • The oil will separate and you can close the gas. Around 5 to 7 minutes is good.
