Crispy Okra / Kurkure Bhindi

A quick and easy dish to whip up as a side. Will keep the instructions simple as well.

Ingredients:

Okra – 500 gms

Oil – Either Shallow or Deep fry. I deep fry this so you need enough oil to cover or less and do it in batches.

Gram Flour / Besan – 2 table spoons and then add more if needed for even coating

Salt to taste

Chilli Powder – 1 teaspoon

Turmeric Powder – 1/2 teaspoon

Get creative and try different spices

Steps:

  • Clean the Okra and pat dry well. Drying is important.
  • In a bowl mix the gram flour and spices. Should be a thick coat and not runny.
  • Make diagonal thin slices of the Okra. More diagonal and thinner the better.
  • Heat oil and reduce to medium low.
  • Mix the old with the coating and fry it in the oil till golden brown. Don’t over fry else will taste bitter.
  • Strain and remove into a paper napkin to soak excessive oil.

Your crispy okra is ready to eat.

Tips:

  • I have added this to Curd (whisked with a little water and salt to taste) just before serving as a variation.
  • Tried the same with Bitter Gourd (sliced) and Parwal (cut lengthwise into quarters)
