This is a steal for your hunger pangs. Quick to make and better than satisfying your urge for a quick snack than a slice of cheese or bread and jam. As you will see you can have so many variations. I remember in Chennai one street side food vendor (Montieth Street it was I think) made a business of cheese toasts and you should see how people throng to eat different types of cheese toasts in the evening. I loved the Chilli cheese toast. This was a regular at home as we grew up as well.

What you need:

Bread (I prefer white, but you can use what you have)

Cheese (shredded or shred it, try the 4 cheese Mexican blend or Italian cheese shred mix)

Tomatoes – sliced (variation with Button Mushroom or Baby Cremini sliced)

Black Pepper Powder

Salt

Tomato Chilli Sauce / Green Chilli Sauce

Mustard Sauce (Kasundhi) – Optional

Butter (optional)

Steps:

  • Heat oven to 180 Degrees
  • Spread butter on the bread (optional)
  • Spread a little Mustard sauce on the bread (optional)
  • Spread out 3 to 4 sliced tomatoes per slice of bread and sprinkle some salt and black pepper
  • Sprinkle shredded cheese – be generous
  • Toast it for 5 to 7 minutes at 180 degrees or till the toast is crisp, cheese has melted.
  • Add some hot sauce on top and it is ready to eat.

Tips:

  • Replace tomatoes with sliced mushroom as a variation for Mushroom Cheese Toast.
  • Add chopped green chillies to make Chilli Cheese Toast.
  • Add mustard sauce for American Cheese Toast.
  • Use chopped onions and capsicum instead of tomatoes
  • Melt butter and add Garlic and then apply to butter for a different flavor.
  • Vary chillies and sauces for hotness level.
  • Put a folded omellete between two slices of cheese toasts
