Use the vegetables you have – onions, capsicum, peppers, cabbage, carrots, beans, book choy, choy som. Any combination, but just cut the vegetables in one size. Small, long strips, at ana angle etc. Bok Choy and Choy Som can be kept whole.

One our favorites and a very easy dish to cook. Very common in Indian cuisine. The dominant hint in our home cooked version is dry fenugreek leaves (Kasoori Methi).
Sudha Aunty’s Fried Potatoes
Simple accompaniment for Curd Rice or Rice and Sambar (South India Lentil Soup). The taste is savoury with a strong hint of roasted cumin. Salt and Cumin give a nice grainy texture to the potatoes.

This is a delightful Indian dish that my better half cooks and it is loved for its simplicity and flavors. Easy and quick to make and is a change from what you typically have in the Indian Menu. Awesome for western tastes so pretty much an all rounder.
